  Talk about "Up With the Chickens"!   Roger the Rooster   I recently visited my parents' place in Fredericksburg, Tx to spend a quiet, relaxing couple of days with family and friends and maybe catch up on some much needed sleep.  Well Roger the Rooster had other plans.  He started crowing about 6:00 am and did not stop until the sun came up around 7:00.  Needless to say, we were all on our third cup of coffee by then. Remember, there's no sleeping late in the country, especially when Roger the Rooster is around!

I just made up a new recipe that I want to share with my friends.  Not all of you will want to bake a pumpkin and mash it to get the goodness out of it but that is what I did.  If that is too hard, use canned pumpkin.   Start with 1/2 cup shortening. Add 1/2 cup brown sugar and 1 cup sugar  Cream together. Add 1 egg and mix.  Add 1 teaspoon vanilla 1  1/2 teaspoons cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cloves and 1 teaspoon salt, mix. Now add 1/2 cup mashed cooked pumpkin and mix well. Next comes the flour.  1 1/2 cups will be good.  I use whole wheat but white is fine.  Add 1 teaspoon baking powder before mixing it in.  Mix half the flour and then mix the rest. Lastly, add 1/2 cup finely chopped pecans. Now bake at 350 degrees for about 15 minutes.  Enjoy!  They must be good for ...

One of my team members recently took a weekend trip to the Texas Hill Country.  And a highlight was the Rockbox Theater in Fredericksburg, Texas.  Friends had recommended the show as comedic, musical & downright entertaining!  And they were right on the money.   The show included a tribute to the Beatles, a musical history of the importance of Texas musicians like Willie Nelson, Buddy Holly, Roy Orbison & Stevie Ray Vaughan (to name a few) and a few lyrical twists on music that had the audience laughing & begging for more.   The talented cast was amazing.  Outstanding vocals & creativity & pure enjoyment rolled into one.  And this was a variety show for the entire family - all generations will enjoy this show.  In fact, the Rockbox Theater was rated the #1 Attraction in Texas by Trip A...

Wondering what to do with old Christmas cookies?  Crush them and make a crust for lots of different recipes. Today I made up this recipe and it is delicious. Try it.                  Peach Sunday Sundae For Crust:        Butter your pan well and spread cookies out to form a crust. For filling:          Mix 1 cup sliced peaches ( I used Fredericksburg peaches I got last summer and froze), 1/4 cup sugar (more if you like it really sweet), 2 teaspoons vanilla.  Spread on top of cookie crust.  Dot with butter.  Sprinkle with cinnamon. I use a lot because I love the taste of cinnamon.  If you don't 1 teaspoon will be plenty.   (If peaches are dry let sit a while so sugar can make them juicy.) For topping:      Mix together 1/3 cup flour, 1/3 cup light brown sugar, pinch of salt, and 1/2 cup ...

They say if you don't like the weather inTexas, wait a day and it will change.  Yesterday it was sunny and 60 degrees.  This morning it is snowing and sleeting.  Burr!  Tomorrow it may be back to normal 60's for this time of year.  I certainly hope so.                                                                              It is actually snowing and sleeting in this picture. Not sticking to the ground yet.  Hopefully, it won't. I am not a cold weather person.  I enjoy sunshine and blue skies.  I don't like wearing coats or scraping my windshield.  Gloves? never wear the things.  Bundling up means restricting movement to this fair weather girl.  I'd much rather suffer a few minutes and run in and out  than put on all that extra clothing.                                              ...

It's not the Bahamas, but Texas State Parks can offer surprisingly enjoyable getaways for a fantastic price. The Hill Country offers a bevy of beautiful state parks within a two hour drive.   When in Fredericksburg, take time to visit some of the beautiful old churches within the city.  There are several wonderful examples of historical architecture.  The Holy Ghost Lutheran Church is one example and is just south of Main street (Hwy 290) in the business district.                                                                                                                                                                       The church was founded in the mid 1800's and is an active congregation to this day.   Fredericksburg is full of German restaurants with great German cuisine like my favorite JaegerSchnitzel at the quaintest restaurant on Main Street but that's another blog.  Today I want to tell you about the best Catfish place north of the Pedernales River.
