This recipe came to me via a good friend, Judy Webb, who served it at bunco last month.  Everyone raved about it and we were fortunate enough to get the recipe the next day.  Try it - you won't be disappointed! Corn Bread Casserole   2 large onions, chopped 6 tablespoons butter or margarine 2 eggs 2 tablespoons milk 2 (15oz) cans cream style corn 1 (1-lb) package cornmeal muffin mix (I used 2 (8oz.) pkgs. of Jiffy corn muffin mix) 1/2 pint (1 cup) sour cream 2 cups shredded cheese   Preheat oven to 425 degrees. Butter a 13x9 baking dish. In a medium skillet, saute' onions in butter till golden brown. Set aside. In a medium bowl, mix eggs and milk until well blended. Add corn and muffin mix. Mix well. According to an article in BusinessWeek, "A new survey finds the Lone Star State is leading in terms of growth rate and household income. Atascocita, Tex., is No. 1 in the state." One of my favorite sushi restaurants is 838.  They are located in the Kroger center at FM 1960 & W. Lake Houston in Atascocita.  Daily lunch specials include sushi, sashimi, bento boxes & udon.   We had lunch there last week & I couldn't resist getting a special from the board - a filet, on a bed of asparagus, topped with crispy noodles.  Yummy!My friend had her favorite white tuna sashimi & decided to try a burrito roll.  The burrito roll was so good  - she had two!  It is wrapped in soy paper & filled with tuna, salmon, avocado & crispy tempura.  There is a spicy sauce served with for dipping.  Also Yummy!  838 is definitely a place to check out if you haven't already had the pleasure! Atascocita High School Project Graduation  will be sponsoring a huge community garage sale/vendor fair on 3/6/10 (rain date is 4/10/10) They are looking for individuals and vendors to reserve sale space. Delicious Dip Recipe3 C Plain Nonfat Yogurt2 cloves garlic, minced2 t cumin1/2 t seasoned salt2 T green chilies, chopped2 C shredded Mexican blend cheese1/4 C fresh cilantro, chopped1 red pepper, diced2 C frozen corn, thawed1 can black beans, drained1 small tomato, seeded & chopped1.  Place the yogurt in cheesecloth or coffee filters in a colander over a bowl to catch liquid.  Let sit in fridge overnight.  (or at least a few hours)  Result will be a smooth thick Yogurt Cheese.2.  Mix everything together and let flavors blend for a few hours.  3.  Serve with chips or veggies - delicious! I wrote last week about a new restaurant opening in Atascocita on January 11 - Five Guys Burgers and Fries.  I promised my readers to be there opening day to check out the food (what a great excuse that was).  So I stuck to my word - Five Guys Burgers and Fries is a WINNER!The menu is simple - hamburger, cheeseburger, bacon burger, bacon cheeseburger - then just add "little" to the same line up for an alternative.  We got in line and made it to the front in no time at all.  When it was time to order, the menu was explained as the "burger" was two patties (3.3 oz each) and the "little burger" was only one patty.  And the regular fries served two people.  My friend Carol & I promply ordered the burger & an order of fries each - totally ignoring the "regular fries serve two" information.  ... 01/13/2010

This is one interesting concept.  A conveyor belt of sushi traveling along in front of you.  You select what you want right off the line.  Sushi Choo Choo.  And it is coming to Atascocita, in front of WalMart on FM 1960.  Enjoy the video of the conveyor belt.  The restaurant has gotten great reviews on B4-U-EAT for its Willowbrook location.  "Hard to find, but worth looking for!
