Here is a recipe for the delicious-looking guacamole shown on Today by Ingrid Hoffman.  I am making it later today for Cinco de Mayo.  Along with chips & a margarita - it's sure to be a great celebration! 2 medium Hass avocados, halved, seeded & peeled 1 C tomatillos, finely chopped 1/2 C red onion, finely chopped 1/2 C mango, seeded & peeled, finely diced 2 serrano chiles, finely chopped (seeded & ribbed for less heat) 2 T chopped fresh cilantro leaves 1 T chopped fresh mint Juice of 1/2 a lemon Salt to taste Mash the avocados in a medium bowl until the texture is semi-smooth.  Gently stir in the tomatillos, onion, mango, chiles, cilantro, mint & lemon juice.  Taste to salt as desired. Just recently I wrote a blog about a new restaurant in Atascocita called The Leaf House.  Located in Orleans Square on W. Overnight Sausage Mushroom Brunch Casserole8 slices whole wheat bread, crusts removed & cubed1 1/2 lbs pork sausage, browned & drained12 ounces finely shredded cheddar cheese3 Cups Milk 4 Eggs2 T Flour1 can (10 3/4 oz) Cream of Mushroom Soup1 C sliced fresh mushroomsUsing a greased 9x13 dish, place bread cubes evenly over the bottom. We have a new frozen yogurt store in Atascocita.  Tutti Frutti.  And it is delicious!  When you walk in the front door, you are greeted with a variety of frozen yogurt flavors.  It is self-serve, so once you select your container size you can find a flavor.  Each machine (and there are at least 6 of them) holds two flavors, like Banana & Peanut Butter.  So, you can pull the lever for either of the flavors or choose the center lever to twist the two flavors together.  Some recent flavors have been Mango, Strawberry, Chocolate, Vanilla, Cookies'n Creme, Pomegranate, Taro* & Red Bean.
