There is nothing worse than biting into a nice Finger of Pus and finding it limp and stale!   But these delectable fingers still have that fresh crunch when you sink your teeth into them.    See receipe below: What you'll need is slices of ham that you roll around crisp gerkins that you've sliced in half, lengthwise.  You next spread cream cheese all over the outside of the ham.   Cover the cream cheese with salsa from end to end and then roll in grated Parmesan.  Cut black olives into the fingernail shape and press onto one end of the 'finger' and cover the other end in salsa, to look like a fresh chopped finger!   Yum

Spiced Couscous with Raisins and Almonds   (goes great with Moroccan Chicken with Green Olives and Lemon) 2 cups hot water 3/4 cup raisins 4 tablespoons ( 1/2 stick) butter, divided 3 tablespoons dry white wine 1/2 teaspoon saffron threads 1 cup couscous   1 medium onion, chopped (about 1 1/2 cups) 3/4 cup sliced almonds, toasted 2 teaspoons ground cinnamon Combine 2 cups hot water and raisins in small bowl. Soak raisins until softened, about 15 minutes. Drain water into large saucepan; reserve raisins. Add 2 tablespoons butter, wine, and saffron to pan; bring to boil. Stir in couscous. Cover, remove from heat, and let stand until liquid is absorbed, about 15 minutes. Meanwhile, melt remaining 2 tablespoons butter in medium skillet over medium-low heat. Moroccan Chicken with Green Olives and Lemon 2 lemons 1 tablespoon olive oil 1 large onion, halved, thinly sliced 2 garlic cloves, pressed 1 tablespoon paprika 2 teaspoons ground cumin 1 teaspoon ground cinnamon 1 teaspoon ground ginger 2 cups chicken broth 8 pieces chicken, skin removed (or boneless chicken breasts if you prefer) 1/2 cup green olives Cut 1 lemon into 8 wedges. Squeeze enough juice from second lemon to measure 2 tablespoons; set wedges and juice aside. Heat oil in large skillet over medium-high heat. Add onion and sprinkle with salt and pepper; sauté until golden brown, about 8 minutes. Add next 5 ingredients; stir 1 minute. Add broth; bring to boil. This morning on Regis and Kelly, they made the new Guiness Book of World Records for the largest Custard Pie Fight! I don't know about you, but personally any type of food fight, be it custard pie or not, absolutely DISGUSTS me!   Yes, I am a huge fan of ANIMAL HOUSE and yes, they probably have the most epic and famous food fight ever, but still people . . .  come on - throwing and wasting food like that? I sent them an email expressing my disgust at their stupidity and insensitivity and I hope you will too. Can you imagine people throwing food like that during the last Depression? How many children went to school hungry this morning?  How many people will go to sleep tonite with hunger pains?   This is just crazy in this day and age.  Are we not supposed to be a civilize nation? Peach Pie Cook Time: 50 minutes Ingredients: 4 cups sliced, peeled fresh peaches 1/2 cup sugar 2 Tbsp. quick-cooking tapioca 1/4 tsp. kosher salt 1 Tbsp. fresh lemon juice 1/2 cup all-purpose flour 1/3 cup firmly-packed brown sugar 1/2 cup chopped pecans 1/2 cup butter 1 9-inch pie crust, frozen then thawed is fine if you don't make your own Preparation: Preheat oven to 375 degrees F. Combine sliced peaches, sugar, tapioca, salt and lemon juice in a mixing bowl. Let sit 15 minutes. In a separate bowl, mix flour, brown sugar and pecans together. Cut in butter with a pastry blender or two knives. Place one-third of the crumb mixture in the bottom of the pie crust. Top with the peach mixture. There once was a lovely property that would not sell.  On the market it sat for more years then I care to say.  It was NOT listed with me but I did show it on occassion.  It seems I was the only one who showed it because when the listing expired (finally) I was called to list it for sale.  Now this story took place 3 years ago.  Within 1 month I had a Buyer with an offer to purchase.  The Buyers, who made the first offer to us, lost out because their agent couldn't get their existing home sold in time.  A second offer had come in and bumped the first.  After years on the market with no interest, we now have 2 offers!!  Disappointment was an understatement for the first Buyer!  Neither of which were my clients though and my Sellers sure were happy!!  They moved on and built their dream h...

~Susan Emo, Gananoque, Ontario~ Are you like me and the 'New Year' begins the first Tuesday after Labour Day?   It's  a brand new school year and the fever hits me every time unlike when I was a child,  and I dreaded having to say goodbye to my fun-filled summer.  I get so excited and invigorated just thinking about it now.  The adrenaline is flowing and I'm actually excited about going to buy new pens, markers, folders, etc.   How sad is that?  And don't get me started about getting that new fall wardrobe!!!!  Whoo Hooo!
