Lovely Tia Maria, who was featured last May, arrived at the shelter on November 13, 2009 and was placed in a foster home to allow an open wound on her back leg to heal. The extra care and attention she received allowed her to fully recover, and she's a healthy and fit lady cat. She enjoys the company of other cats but does take a bit of time to feel comfortable with them. She's now spent her entire kittenhood at the shelter and has been waiting a very long time for a family to call her own. My very much older brothers LOVE to terrorize me by doing one thing when I'm not aware - sort of a delayed prank if you will.   Leprechauns have been protected on a European directive thanks to a group of lobbyists in Carlingford, Co. Louth. "We are delighted in the knowledge that our little people will be protected from extinction and allowed to thrive on the mountains," said local man Kevin Woods. As he explains in the video, "there are only 236 leprechauns still living in Ireland on the Foy mountain at Slate Rock". He believes that this place is of the spirit world. The story goes that in 1989, P.J. O'Hare, a local businessman and publican, was up on Carlingford mountain when "he heard a scream coming from the area beside the Wishing Well. I loved it so much I received a gift certificate for my 50th birthday for 50 Lattes !! I met there yesterday with a client/friend for lunch and had the most amazing meal with my new favourite hot drink: fresh lemonade with fresh ginger!!! Forget about all the wonderful health benefits to this concoction (and there are many) - it is just a fantastic taste. But the soup of the day was out of this world good: Thai sweet potato, squash, baby spinach and coconut milk soup. They even publish the soup of the day on their Facebook page!! Pot Roast in Guinness Gravy   16 ounces Guinness3 to 4 pounds of chuck roast2 tablespoons Spice House English Prime Rib Rub Seasoning* 2 tablespoons olive oil2 large onions, coarsely chopped1 clove garlic, minced2 cups beef stockVegetables (see note near the bottom)3 tablespoons cold water2 tablespoons cornstarch *amcelery salt, onion powder mixture. Preheat oven to 450 degrees. Pour the Guinness into bowl and set aside to allow the Guinness to flatten. (sacrilegious some would say!) Rub roast with combined seasonings. Get your Irish on with this fantastic soup . . . Potato and Cabbage Soup you need a blender for this! 1 medium white onion - sliced 1 clove garlic, chopped1 green cabbage/Savoy cabbage - cored and roughly sliced1 1/2 lbs. white potatoes - chopped in small chunks4 cups chicken broth2 sprigs of thymeolive oilSalt &PepperIn your soup pot, saute the onions for 3-4 mins in 1 tbsp olive oil over medium heat. Don't let them get too brown as this will discolour the finished soup. Add in chopped garlic and cabbage. Stir and cover for 8-9 mins. or until cabbage begins to soften. Once softened add chopped potatoes and thyme and mix everything together over the heat for about 2 minutes. HOMEMADE IRISH BROWN WHEATEN (BREAD) Takes only moments to prepare and 30 min to bake!!! Ingredients 2 cups all-purpose flour2 cups whole wheat flour1 1/2 teaspoons baking soda3/4 teaspoon salt2 cups buttermilk Cooking spray (or parchment paper) Directions Preheat oven to 450F Combine the flours, baking soda and salt in a large bowl. Gananoque, Ontario I was so touched to receive an invitation to attend a "Thank You" event at our local Salvation Army. I made sure I cleared my schedule in order to be able to attend. It was wonderful to see every single chair in the room filled with a volunteer. Volunteers that Dave Harvey, the Director of our local Gananoque Salvation Army, thought enough of, to host an appreciation luncheon. It was humbling to see the wonderful buffet that was provided for all to enjoy. Trays of tasty deli sandwiches, fresh fruit, cheese and crackers, and desserts that were calling to everyone there :0)  Dave then asked for everyone's attention and he shared with us that our Christmas Kettle Drive was more than successful.
