I come home and clean them and then pop them into the pan and sautee in olive oil! Add some sliced tomatoes, feta cheese and a few black olives and you have the best possible brunch! Tarpon Springs is a neat little Greek community that sits on both the Anclotte River and the Gulf of Mexico! Along the Sponge Docks are dozens of adorable little shops that offer items that are made locally as well as a large selection of things you would find in Greece! This is one of my favorite places to take an early morning stroll and do some shopping before the tourists arrive. The shops are just opening up for the day and the streets are still quiet! Tarpon Springs Florida has many great restaurants and lounges to visit but one where you are sure to have a great time is Captain Jack's, located right on the Anclotte River off Alt 19 in Tarpon Springs. Actually, it is on the north side of the Anclotte River Bridge - really easy to find! If you are driving on Alt 19, it is on the northwest corner of the bridge! If you don't know directions, look for the great white shark out front! You really can't miss that! And if all else fails, look for the boat with Captain Jack himself in it next to his catch of the day!!!! Naturally, you could just look for the sign - but what fun would that be??? Brooker Creek Preserve in Tarpon Springs Florida This weekend I hiked at Brooker Creek Preserve in Tarpon Springs Florida. Tarpon Springs Florida Sponge Docks are known all over the world! Tarpon Springs is the one place in Florida where you can walk into almost any store or restaurant and speak Greek!!! It is a Greek community right here in Pinellas County! Located north of Clearwater, it is also a wonderful place to live!!! In 1887 the sponge industry started in Tarpon Springs. Greek sponge divers were brought over here and by 1905 there were over 500 Greek sponge divers living in Tarpon Springs. Ever since that time the Greek community in Tarpon Springs has increased.
