I love March on the Space Coast for many reasons!We have spring training baseball throughout the State of Florida.The days begin to get much longer so more sunshine for the Sunshine State!The water in the ocean begins to warm!...but one of my favorite March rewards is the huge number of manatees just hanging out in the river.Manatees (known as sea-cows) are large vegetarian animals that love the warm waters of our canals and rivers. Unfortunately it also means they come in close proximity to boats. Many of these peaceful animals get caught in the propellers of boats...and you can see the cuts of the propellers on there backs :(I often visit a small park in Satellite Beach to get an up close view.  I absolutely love eggplant. I pretty much love it any way that I can get it. I love the texture of the soft delicate flesh and the flavor of the eggplant itself, so I really don't care for a lot of different spices or herbs to mask the flavor I love so much. So, I have come up with my own version below. Of course it does!Salmon Croquettes1 can of salmon1 bunch of green onion diced1 egg beaten1/4 cup bread crumbs1/4 cup cornmeal1 teaspoon of salt1 teaspoon of pepper1 teaspoon of garlic powderVegetable oil for fryingMix ingredients and form into croquettes (patties). Yesterday I had to make one of the hardest decisions ever. I had to say good bye to one of the sweetest dogs ever to have been born, my boy Harley. Harley was a puppy mill dog that I adopted 6 years ago when he was 3. He had epilepsy and because of the seizures and the damage they do, he wasn't the brightest bulb in the box. But he was the sweetest. Harley loved everyone he met, but he especially loved me, and that was one of my greatest gifts. He sat right behind me in my office chair as I worked at the computer. He sat right next to me when I  watched the news. He would snuggle up close to me in bed at night. If I moved during the night, he would re-adjust and get even closer to me if possible. Zucchini Crisp Pizzas Serves 6   Ingredients 3 medium zucchinis, rinsed and cut into thin rounds 2/3 cup Panko or seasoned breadcrumbs 2/3 cup parmesan cheese, grated 1/2 cup mozzarella cheese, grated 1/3 cup marinara or pizza sauce 2-3 tablespoons extra-virgin olive oil kosher salt and freshly ground pepper, to taste Directions Preheat oven to 450ºF and lightly grease a rimmed baking sheet with non-stick spray. Beef O' Brady's  was started in 1985 by Jim Mellody in Brandon, Florida. Now a chain, Beef O' Brady's  is even in Saudi Arabia! Here on the Space Coast there are 8 locations with 1 being Beachside. The ubiquitous Hewlett-Packard 12c financial calculator has been around a lot longer than the almost 25 years that I've been in the business. Sure, HP and other companies have come out with "newer" financial calculators...but none of them have been more wildly accepted as the good ol' gold standard, the HP12c.I have three of them. The first I bought when I first got into the business. The second I bought when I lost the 1st for a couple of weeks. The 3rd was given to me by my mother after she took a college class that required the 12c and she swore she would never touch one again after the class ended. Those suckers are pricey, they definitely have not come down in price as technology has advanced. I paid $60 for mine 20+ years ago. Today you can pay close to $80, $79.99 to be exact. Recently I tried the "Insane Burrito" from Da Kine Diego's Insane Burrito. Can you say burrito coma? You will have to learn if you plan on eating at this funky Beachside eatery. The burrito at Da Kine Diego's  sort of reminds me of what Chiptotle burrito's originally were like before that chain got bought out by McDonalds. I seriously don't think that there are many people that could eat an entire Insane Burrito in one sitting. I certainly can't. The monsters coming out of Da Kine Diego's  are massive! Although other food options are available on the menu, I would imagine that most diners go straight for the Insane Burrito. I am constantly amazed and highly annoyed every time I pick up my phone and am greeted by a prerecorded robo call message saying something like: "This is a call unlike anything you have ever heard..."I never hear any more. I disconnect the call in disgust. I then automatically add that number to my auto reject list. I'm not sure what these people think that I am going to do. Maybe they think I am stupid enough to think to myself,"DAMN! I've got to get me some of that! Where do I sign up?"I can honestly say I do not remember if I have ever listened to one of those messages all the way through.  Does anyone? Last week when I was driving back from showing property up in Cape Canaveral and Cocoa Beach I felt like Greek food for dinner so I stopped in at Niki's Rainbow Restaurant in Satellite Beach. Located at 570 Hwy A1a in Satellite Beach, I had driven by this Greek eatery several times and decided to stop in and try it. Niki's Rainbow Restaurant  is located in a sad and tired strip mall, but the staff were incredibly friendly and helpful when I walked in and the service was super fast. I couldn't give higher kudos to the ladies working that night. I recently had to run down to my local Verizon store. While I was there I saw a little gadget on the counter that was obviously for a child.  It was the LG Gizmopal...the newest technology for kids ages 4 and up. They come in blue and pink for boys and girls, and are worn on the wrist much like a wristwatch. There is a button on the Gizmopal that allows a parent to program 2 numbers into it. It can also be programmed to receive up to 4 incoming telephone numbers. The device also has a GPS feature which allows you to locate the device thus your child!It your child needs you, they can push the button on the Gizmopal once or twice...once for the first number (Mommy perhaps?) or twice for the second number (possibily Daddy or a grandparent). Loggerhead Sea Turtles are the species of sea turtle that we see the most on the Space Coast. The Loggerhead Turtle is easily identified because of it’s massive head. No one knows exactly why they are called “Loggerheads”, but there is one theory that says that because of the large size of this turtle’s head or, “larger head” that is larger than other species, that the name morphed into “Loggerhead”. The Loggerhead Turtle weighs up to 400 lbs and is up to 4 feet in length. They have evolved such large heads because of their diets. They not only eat jellyfish, but they also feed on crustaceans and can chew up and swallow an entire conch shell with their powerful jaws.
