I must say it's kind of creepy sitting in a Orlando hotel room with your pets watching the TV for any sign that your home may get blown away. The fur babies slept peacefully as long as I was there with them. There was a curfew in Orlando so that wasn't really much of a problem.The weather service was calling the storm "catastrophic" so I was more than fine to stay put. By Friday most of the worst was over. The barrier islands had been under a mandatory evacuation order, and in order to save the infrastructure of the water system the water was turned off to the entire island. The causeways to and from the island were closed and we were told to wait until they were open to even consider coming back. Electricity was also spotty. It wasn't until Saturday that we ventured back from Orlando. ... 10/10/2016

Hello Activerain Peeps. Well things down here in the path of Hurricane Matthew seem to be going from bad to worse. For starters, check out the creepy weather map to the right that is staring at us online!I made the decision to close the office until Monday. On my way home I stopped off at the local Winn Dixie for provisions. The water isle and the bread isle were pretty sparse. I did manage to score a loaf of bread and some peanut butter and jelly. That's all I need, plus food for the fur babies. The lines at the gas station were completely ridiculous, but after a very long wait, I was able to fill up my tank.                   Tonight we learned that there is a mandatory evacuation of the barrier island starting at 3:00pm tomorrow. It almost seems surreal. The sky is blue, with puffy white clouds in the sky. It is a beautiful 86 degrees outside...nothing points to what is coming except for the migraine that tried to catch me earlier today. I always get migraines when there is a barometric change, and there was a big one today! That is the only thing that signals the storm to come, that and the massive crowds at the hardware store and grocery stores buying up every piece of plywood and bottles of water to be found!I have the plywood, but no one to help put it on the house. It seems you need 2 - 3 people for that. This is my fault for not having storm shutters installed when I bought the house. I guess that will have to be done this winter. I have a dear friend who works full time as an RN and goes to school full time to become a Nurse Practitioner. She called me up a few weeks back sobbing because, between her school and work schedules she didn't feel she was giving an adequate amount of time and attention to her two Yorkie boys Leonidas (Leo) and Sampson (Sammy). I told her to bring the pups down to my house and they could stay with me until her schedule settles down a bit. Our dogs know each other, I have a big yard with a doggy door so there were no problems.She flew down with the boys last Thursday. We had some pretty severe storms here recently. The rains were torrential with the remnants of Tropical Storm Colm...I didn't even have to put any water in my pool, the rain did it for me! I saw one of the best movies I have been to in a long time last night. Me Before You, by Jojo Moyes. Me Before You, is the beautiful story of quirky Louisa Clark, (played by Emilia Clarke) a young woman who is hired to be a companion and caretaker for handsome Will Traynor (played by Sam Claflin) a quadriplegic man. Will was paralyzed after being hit by a motorcycle. Will was distant and withdrawn when Louisa comes into his life. Louisa is a breath of fresh air who draws Will out of his shell by engaging him in activities outside of the family home. As in most chic flicks, Louisa and Will fall in love with each other. Imagine this, you're out for a nice relaxing day on the water. You decide to do a little spearfishing so you put on your SCUBA gear and head over the side of the boat into the water. When you surface the boat is gone...yes, that's right gone. Randy Fales, 68, of Satellite Beach lived it! Fales went out on the ocean with his family this past week and when he surfaced, he found that the anchor line he was depending on to get back to the boat and come free. So I was in my house yesterday. It was a beautiful Saturday afternoon and I had just finished working on my pool getting it cleaned, testing the water levels etc. All of the sudden, the Yorkies starting barking and making a racket. I walked over to my front door, which was open to let a breeze through, and there stood four little kids. There were two boys and two girls. Behind them they were pulling a wagon with crayon drawn pictures in it. As the weather gets warmer here on the beautiful Space Coast of Florida, my desire for heavy food dwindles. So, this vegetable lasagna recipe really appeals to me this time of year. I took my sweet girl Molly down to the beach this afternoon for a walk on the beach...a treat for both of us for sure. While walking, I noticed many Portuguese man o' war laying on the beach. The Atlantic Portuguese man o' war, also known as a Man-of-War or Blue Bubble has a blue gas filled bladder that allows it to float on the top of the ocean with its tentacles submerged below the surface. Laying on the beach, the Portuguese man o' war is a pretty blue color, but make no mistake, the Portuguese man o' war is venomous, and it's sting is extremely painful resulting in long, open wounds that look like you have been whipped. I love March on the Space Coast for many reasons!We have spring training baseball throughout the State of Florida.The days begin to get much longer so more sunshine for the Sunshine State!The water in the ocean begins to warm!...but one of my favorite March rewards is the huge number of manatees just hanging out in the river.Manatees (known as sea-cows) are large vegetarian animals that love the warm waters of our canals and rivers. Unfortunately it also means they come in close proximity to boats. Many of these peaceful animals get caught in the propellers of boats...and you can see the cuts of the propellers on there backs :(I often visit a small park in Satellite Beach to get an up close view.  I absolutely love eggplant. I pretty much love it any way that I can get it. I love the texture of the soft delicate flesh and the flavor of the eggplant itself, so I really don't care for a lot of different spices or herbs to mask the flavor I love so much. So, I have come up with my own version below.
