I could tell you how it works in Lake County which should be similar to Polk County. If you call the Polk County Clerk, they will guide you as well. In Lake County, once you file and pay the necessary fees, they will assign two officers who will carry out the process and you should be present when it's done to change the locks.

     Contact the Law Enforcement Office that oversees the eviction and/or enforces the Court Ordered Eviction notices (Polk County Sheriff?). 

  They should have the names of Servers who can deliver notices, and the names of people who can carry out the physical eviction.

  Also, do an internet search for Polk County Florida Process Servers.  You can find some people there.

Contact your local apartment owners assoc they will have a good list.
