I am in Tallahassee; I have also been a Board member of OMCAR (Ocala), RASM (Sarasota), OCAR (Orlando). I have closed transactions in other Florida towns and cities. It's the same everywhere in Florida.
Buyer occupy prior to close, or Seller continues to occupy after closing, can create a legal nightmare. If you absolutely have to do it, have a lawyer draw up separate lease documents detailing insurance, liability, etc.

I'm in Massachusetts.... the day of occupancy is typically after the documents are signed and prior to recording the deed!! that's common practice...however, I have builders who will not give the keys unless the deed is recorded and he has the proceeds!! we close those at the Registry of Deeds.... most resale homes will allow the buyers to begin moving furniture in after the closing and prior to recording ( and recording happens within a few hours.)

In the Phoenix area, we frown on Pre and Post Possession. Too much liability, too many things to go wrong. It does make it a little more complicated if the seller does not want to leave until closing. I have literally had sellers going out the back door while the buyers were coming in the front door.

We were one of only a few states that kept a practice of the Seller having 3 days in the home after closing until 2-3 years ago. Now, we all TRY to get possession day of closing, but many times a post closing agreement is needed.
