Dennis, it depends on how sophisticated you want to get.  You can use a web cam or a smartphone.  Or you can get an actual videorecorder (they come in various prices).  There are also some free programs that let you record your computer screen (powerpoint, web browser - anything on your screen really) and you just need a microphone/headset for the sound.  A google search will bring them up and you can sample them.  I've been using CamStudio.  Maybe not the best, but a good starting point.  Haven't gotten into a lot of editing yet so I have no recommendations there.

USe a solid DSLR platform. The lenses and lighting are equally if not more important and don't forget a fluid head tripod.

You can get a Canon that works remotely from your phone for under $500. Cowboy Lighting systems start at $62 and an Audio Technica wired lavilier mic is about $25. Tripod about $25.

Is your vision of instructional video standing in front of recorder and chatting? No cuts, change of perspective, close up, not so close.

How about scribble or sketch morphing? 

What about sound? Camera mic, wireless, voice over, soundtrack, multi-channel?

For most applications the smart phone can record all the source media. The real work comes after that. 

I use PPE easysketch and based on site environment, SLR camera or cell.
