Greg, the only way to change a date to my knowledge is to put the post in draft and then re-post it. This will not remove the date but it can give you a more current date if you go back and edit and update a post. I am not sure with all the changes to AR if that is still the case. Last one I did like that was a post from 2010 and I updated it in July 2014. This is the only thing I know of, but it will not remove the date.

Yes. I have seen many bloggers post without dates and have even suggested that they include dates but they don't want to for various reasons. I have not enquired how they do this feat on their blog.

FWIW, I'm not a coder, but I believe that AR has the time and date programmed into the source code. Below is an example/excerpt:
