I also save them in each client's folder on my hard drive and when the transaction is completed, I burn the file to a disc. I use the Mozilla Thunderbird email client, which will let you save emails as .eml files for future use. Usually I find it sufficient to download emails into Thunderbird itself and just leave them there, as they will remain in the program until you delete them.

I have a main yahoo account and a back up gmail account. I'll forward emails that need to be saved from my yahoo to gmail account.

For other emails, if you use Outlook, you can keep all the transaction related emails into one folder and archive the folder.
