I automatically transfer all email correspondence (and all other documents) to each client's folder in my Evernote account. I also save them in each client's folder on my hard drive and when the transaction is completed, I burn the file to a disc. I also send email correspondence to each client's file on my Top Producer account.

I have Gmail and simply have a folder for the transaction that I move all emails too as we progress.  Nothing fancy and yet I know everything is there and easy to find if necessary.  Mark

I use the Mozilla Thunderbird email client, which will let you save emails as .eml files for future use. Usually I find it sufficient to download emails into Thunderbird itself and just leave them there, as they will remain in the program until you delete them.

Frank Rubi, MBA we use DotLoop for online transactions - and can save the transaction loop. (And archive, too.)

For other emails, if you use Outlook, you can keep all the transaction related emails into one folder and archive the folder.
