If what you mean by "turning down the gas" is turning down the temperature on your water heater, then yes.  If you're keeping a tank of water heated hotter than 120 degrees you're probably wasting money.

I'm not sure what you mean by turning down the gas.  Turning down the temperature for the heater will save you money.
