This is way too easy ...
Tell them you're too busy to cook because you've officially promised yourself you will only blog between 6 and 8 pm every night ... which, unfortunately, is during the dinner hour.
This will serve two purposes ...
1. someone else will cook for a change
2. this won't last long, so you will soon be free to blog whenever you dang well please.
As an added bonus, here's the Thai Peanut Chicken recipe I was served last night by my mate ... enjoy!
THAI PEANUT CHICKEN
2 cups uncooked white or brown rice, made according to package directions
3T soy sauce
2T creamy peanutbutter
2tsp. white wine vinegar
1/4 tsp. cayenne papper
3T olive oil
4 skinless, boneless chicken breast halves, cut into thin strips
3T chopped garlic
1 1/2T chopped fresh ginger root
3/4 cup chopped green onions
2 1/2 cups broccoli florets
1/3 cup unsalted dry roasted peanuts
DIRECTIONS:
1. Cook rice according to package directions.
2.In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
3. Heat oil in skillet or wok over high heat. Add chicken, garlic and ginger and cook, stirring constantly until chicken is golden on the outside, about 5 minutes.
4.Reduce heat to medium and add green onions, broccoli, peanutes and peanutbutter mixture. Cook, stirring feequesntly for 5 minutes or until broccoli is tender and chicken is cooked through.
5. Serve over the hot rice.
Dee...I will be printing this out and will be presenting it to my husband in the morning. As he is the only cook we have in the house he will appreciate receiving a new recipe. This is one I am going to love! He will like it.
