Walter A. Kelso, Sr. was a Texas Gulf Coast legend, and invitations to his Christmas Eve celebrtions were coveted by the rich and famous.

Along with his gracious wife, Elizabeth (Nan-Naw), the parties held in their beautiful mansion were prepared by their cook, Amanda, and the staff.  This is Paw-Paw's famous Egg Nog.  There is none else like it.  (This is the first time it has been revealed to the public.  Paw-Paw has been deceased for more than 35 years.)

I haven't made fresh homemade eggnog is over a decade...

Bill, I have to be honest I have never made fresh eggnog.  I will continue being honest in that I didn't know it was made from raw eggs.  I guess it makes sense named Eggnog but somehow the raw egg part doesn't thrill me.  I guess it is one of those things you just have to enjoy and not think about the ingredients.

The original recipes were made with raw eggs.  Casear dressing was made with a raw egg as was milk punch and on an on.

When the world began to worry about non-cooked eggs, ways were dreamed up to make eggnog with cooked eggs, Caesar dressing was screwed up completely and milk punch became unpopular because it was unchangeable.

Now apparently like the cranberry sauce cancer scare of a few decades ago, scientists have decided fresh eggs have about an equal chance of making people ill, whether raw or cooked.  Eggnog and Caesar dressing have returned to many pallets.

Bill, oh how delicious eggnog tastes!  But I'm oft reminded of the phrase "a moment on the lips, a lifetime on the hips."  Time to really utilize that gym membership.
